Ingredients

  • 1 pack of rice noodles
  • 1/2 pound of pork belly, thinly sliced
  • 1/2 cup of shrimp, peeled and deveined
  • 1/4 cup of annatto seeds
  • 4 cups of pork broth
  • 1/2 cup of fish sauce
  • 1/4 cup of cornstarch
  • 1/2 cup of water
  • 3 hard-boiled eggs, sliced
  • 1/2 cup of crushed chicharron (pork cracklings)
  • 1/4 cup of green onions, chopped
  • Lemon wedges

Instructions

  1. In a pot, boil the rice noodles according to package instructions. Drain and set aside.
  2. In a separate pot, heat the annatto seeds and pork broth. Let it simmer for 15 minutes, then strain the liquid to remove the seeds.
  3. Heat a pan and cook the pork belly until browned. Add the shrimp and cook until pink. Set aside.
  4. In a saucepan, combine the annatto-infused broth, fish sauce, and cornstarch dissolved in water. Cook until the sauce thickens.
  5. Assemble the dish by placing the cooked noodles on a serving platter. Pour the sauce over the noodles and top with the cooked pork belly and shrimp.
  6. Garnish with sliced hard-boiled eggs, crushed chicharron, and chopped green onions. Serve with lemon wedges on the side.
