Ingredients

  • 2 cups glutinous rice, soaked for 4 hours
  • 1 cup thick coconut milk
  • 1 cup water
  • 1/2 tsp salt
  • 6 pandan leaves, blended with 1/2 cup water, strained
  • 1 cup sugar
  • 4 eggs
  • 1/4 tsp salt

Instructions

  1. Drain the soaked glutinous rice and spread it evenly in a steaming tray lined with banana leaves.
  2. In a pot, combine the coconut milk, water, and salt. Bring to a boil and pour over the glutinous rice. Steam for 20 minutes.
  3. In a bowl, mix the pandan juice, sugar, eggs, and salt. Strain the mixture.
  4. Pour the pandan mixture over the partially cooked glutinous rice. Steam for another 20 minutes or until the pandan layer is set.
  5. Let the cake cool completely before cutting into squares and serving.
