Ingredients
- 2 cups glutinous rice, soaked for 4 hours
- 1 cup thick coconut milk
- 1 cup water
- 1/2 tsp salt
- 6 pandan leaves, blended with 1/2 cup water, strained
- 1 cup sugar
- 4 eggs
- 1/4 tsp salt
Instructions
- Drain the soaked glutinous rice and spread it evenly in a steaming tray lined with banana leaves.
- In a pot, combine the coconut milk, water, and salt. Bring to a boil and pour over the glutinous rice. Steam for 20 minutes.
- In a bowl, mix the pandan juice, sugar, eggs, and salt. Strain the mixture.
- Pour the pandan mixture over the partially cooked glutinous rice. Steam for another 20 minutes or until the pandan layer is set.
- Let the cake cool completely before cutting into squares and serving.
