Ingredients

  • 2 cups coconut milk
  • 1 cup pandanus leaves, chopped
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt

Instructions

  1. In a saucepan, combine the coconut milk and pandanus leaves. Heat over medium heat until it comes to a simmer. Remove from heat and let it cool for 10 minutes. Strain the mixture to remove the pandanus leaves, pressing to extract as much flavor as possible.
  2. Return the infused coconut milk to the saucepan. In a small bowl, mix the cornstarch with a little water to make a slurry. Add the sugar, salt, and cornstarch slurry to the coconut milk, stirring constantly.
  3. Cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon, about 10-15 minutes.
  4. Pour the pudding into serving dishes and let it cool to room temperature. Then refrigerate for at least 2 hours until set.
