Pandanus Pudding
Pandanus Pudding is a traditional dessert from Nauru, a small island country in the Pacific Ocean. This sweet and creamy pudding is flavored with pandanus leaves, giving it a unique and delightful taste.
Ingredients
- 2 cups coconut milk
- 1 cup pandanus leaves, chopped
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
Instructions
- In a saucepan, combine the coconut milk and pandanus leaves. Heat over medium heat until it comes to a simmer. Remove from heat and let it cool for 10 minutes. Strain the mixture to remove the pandanus leaves, pressing to extract as much flavor as possible.
- Return the infused coconut milk to the saucepan. In a small bowl, mix the cornstarch with a little water to make a slurry. Add the sugar, salt, and cornstarch slurry to the coconut milk, stirring constantly.
- Cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon, about 10-15 minutes.
- Pour the pudding into serving dishes and let it cool to room temperature. Then refrigerate for at least 2 hours until set.
