Pandi Curry (coorgi Style Pork Curry)

Ingredients

  • 500g pork, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/4 cup grated coconut
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons Coorgi masala powder
  • 1 teaspoon turmeric powder
  • 2-3 green chilies, slit
  • 1 sprig curry leaves
  • Salt to taste
  • 2 tablespoons oil
  • 1 cup water

Instructions

  1. Heat oil in a pan and sauté the chopped onions until golden brown.
  2. Add the ginger-garlic paste and sauté for a few minutes.
  3. Next, add the pork cubes and cook until they are browned on all sides.
  4. Stir in the Coorgi masala powder, turmeric powder, and green chilies. Cook for 2-3 minutes.
  5. Pour in the tomato puree, grated coconut, and curry leaves. Mix well and cook for 5 minutes.
  6. Add water, season with salt, and cover the pan. Simmer for 45-50 minutes until the pork is tender and the curry has thickened.
  7. Once done, remove from heat and serve hot with steamed rice or rice rotis.
