Pandi Curry (coorgi Style Pork Curry)
Pandi Curry, also known as Coorgi Style Pork Curry, is a traditional dish from the Kodava Cuisine of Karnataka, India. This flavorful and aromatic curry is a staple in Coorgi households and is often served with steamed rice or traditional rice rotis.
Ingredients
- 500g pork, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/4 cup grated coconut
- 1 tablespoon ginger-garlic paste
- 2 tablespoons Coorgi masala powder
- 1 teaspoon turmeric powder
- 2-3 green chilies, slit
- 1 sprig curry leaves
- Salt to taste
- 2 tablespoons oil
- 1 cup water
Instructions
- Heat oil in a pan and sauté the chopped onions until golden brown.
- Add the ginger-garlic paste and sauté for a few minutes.
- Next, add the pork cubes and cook until they are browned on all sides.
- Stir in the Coorgi masala powder, turmeric powder, and green chilies. Cook for 2-3 minutes.
- Pour in the tomato puree, grated coconut, and curry leaves. Mix well and cook for 5 minutes.
- Add water, season with salt, and cover the pan. Simmer for 45-50 minutes until the pork is tender and the curry has thickened.
- Once done, remove from heat and serve hot with steamed rice or rice rotis.
