Pandi Curry (kodava Style Pork Curry)
Pandi Curry, also known as Kodava Style Pork Curry, is a traditional dish from the Kodava Cuisine of Karnataka, India. This flavorful and spicy curry is a staple in Kodava households and is often served during special occasions and festivals.
Ingredients
- 1 kg pork, cut into cubes
- 2 onions, finely chopped
- 4-5 green chilies, slit
- 1-inch ginger, grated
- 6-8 garlic cloves, minced
- 1 tsp turmeric powder
- 2 tbsp Kodava masala powder
- 1 cup coconut milk
- Salt to taste
- 2 tbsp vegetable oil
- Few sprigs of curry leaves
Instructions
- Heat oil in a large pot or kadai over medium heat.
- Add the chopped onions, green chilies, ginger, and garlic. Sauté until the onions are golden brown.
- Add the pork cubes and cook until they are browned on all sides.
- Stir in the turmeric powder and Kodava masala powder. Cook for 2-3 minutes.
- Pour in the coconut milk and add salt to taste. Bring to a simmer.
- Cover and cook on low heat for 45-50 minutes, or until the pork is tender.
- Garnish with curry leaves and serve hot with steamed rice or akki roti.
