Paneer Butter Masala (chettinad Paneer Butter Masala)

Ingredients

  • 200g paneer, cubed
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/2 cup cashew nuts, soaked
  • 1/4 cup butter
  • 1/2 cup cream
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1 tsp kasuri methi (dried fenugreek leaves)
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and sauté the onions until golden brown.
  2. Add ginger-garlic paste and sauté for a minute.
  3. Now, add the tomato puree and cook until the oil separates.
  4. Meanwhile, blend the soaked cashew nuts into a smooth paste.
  5. Add the cashew paste to the pan and cook for a few minutes.
  6. Stir in red chili powder, turmeric powder, and garam masala.
  7. Add butter and cream, and mix well.
  8. Finally, add the paneer cubes and kasuri methi, and simmer for a few minutes.
  9. Garnish with fresh coriander leaves and serve hot.
