Ingredients

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a large bowl, beat the melted butter and sugar until well combined. Add the eggs, one at a time, beating well after each addition. Stir in the pumpkin puree, milk, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chopped walnuts, if using.
  5. Divide the batter evenly among the prepared muffin cups.
