Panggang Ayam (grilled Chicken Skewers)

Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into cubes
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 inch (2.5cm) fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 1/4 cup (60ml) coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the chopped onion, minced garlic, grated ginger, soy sauce, brown sugar, ground coriander, ground cumin, turmeric, cayenne pepper, coconut milk, and vegetable oil. Mix well to create the marinade.
  2. Add the chicken cubes to the marinade, making sure they are well coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked wooden skewers.
  4. Grill the chicken skewers for about 6-8 minutes per side, or until they are fully cooked and have beautiful grill marks.
  5. Remove the chicken skewers from the grill and let them rest for a few minutes before serving.
