Panggang Ayam (grilled Chicken Skewers)
Panggang Ayam, or Grilled Chicken Skewers, is a popular dish in Palembang cuisine. The chicken is marinated in a flavorful blend of spices and then grilled to perfection, resulting in tender and juicy skewers that are bursting with delicious Indonesian flavors.
Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs, cut into cubes
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 inch (2.5cm) fresh ginger, grated
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper
- 1/4 cup (60ml) coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the chopped onion, minced garlic, grated ginger, soy sauce, brown sugar, ground coriander, ground cumin, turmeric, cayenne pepper, coconut milk, and vegetable oil. Mix well to create the marinade.
- Add the chicken cubes to the marinade, making sure they are well coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked wooden skewers.
- Grill the chicken skewers for about 6-8 minutes per side, or until they are fully cooked and have beautiful grill marks.
- Remove the chicken skewers from the grill and let them rest for a few minutes before serving.
