Panggang (smoked Duck In Spicy Sauce)
Panggang is a traditional Batak dish featuring succulent smoked duck in a spicy sauce. This dish is bursting with bold flavors and is perfect for those who enjoy a bit of heat in their meals.
Ingredients
- 1 whole duck, smoked
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 3 red chilies, sliced
- 2 tomatoes, diced
- 1 lemongrass stalk, bruised
- 3 kaffir lime leaves
- 1 tsp tamarind paste
- 1 tsp palm sugar
- Salt to taste
- Water
Instructions
- In a large pan, sauté the shallots, garlic, and red chilies until fragrant.
- Add the diced tomatoes, lemongrass, and kaffir lime leaves. Cook until the tomatoes are soft.
- Add the tamarind paste, palm sugar, and salt. Stir well.
- Pour in enough water to create a sauce consistency. Simmer for 10 minutes.
- Add the smoked duck to the sauce and simmer for another 20 minutes.
- Once the sauce has thickened and the duck is heated through, remove from heat.
- Serve the panggang hot with steamed rice.
