Panggang (smoked Duck In Spicy Sauce)

Ingredients

  • 1 whole duck, smoked
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 red chilies, sliced
  • 2 tomatoes, diced
  • 1 lemongrass stalk, bruised
  • 3 kaffir lime leaves
  • 1 tsp tamarind paste
  • 1 tsp palm sugar
  • Salt to taste
  • Water

Instructions

  1. In a large pan, sauté the shallots, garlic, and red chilies until fragrant.
  2. Add the diced tomatoes, lemongrass, and kaffir lime leaves. Cook until the tomatoes are soft.
  3. Add the tamarind paste, palm sugar, and salt. Stir well.
  4. Pour in enough water to create a sauce consistency. Simmer for 10 minutes.
  5. Add the smoked duck to the sauce and simmer for another 20 minutes.
  6. Once the sauce has thickened and the duck is heated through, remove from heat.
  7. Serve the panggang hot with steamed rice.
