Ingredients

  • 1 cup semolina (sooji)
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • Water
  • 1 cup boiled and mashed potatoes
  • 1/2 cup chopped onions
  • 1/4 cup chopped coriander leaves
  • 1/4 cup tamarind chutney
  • 1/4 cup mint-coriander chutney
  • 1/2 tsp chaat masala
  • 1/2 tsp roasted cumin powder
  • 1/2 tsp red chili powder
  • 1/2 cup sev (crispy chickpea noodles)

Instructions

  1. In a bowl, mix together the semolina, all-purpose flour, salt, and baking soda. Add water gradually to form a smooth dough. Cover and let it rest for 20 minutes.
  2. Divide the dough into small balls and roll them out into thin discs.
  3. Heat a pan over medium heat and cook the discs until they puff up and turn golden brown. Set aside to cool.
  4. In a bowl, mix together the boiled and mashed potatoes, chopped onions, coriander leaves, chaat masala, roasted cumin powder, and red chili powder.
  5. Place a spoonful of the potato mixture on each semolina disc. Drizzle with tamarind chutney and mint-coriander chutney.
  6. Sprinkle sev on top and roll up the discs into sushi rolls.
  7. Cut the rolls into bite-sized pieces and serve immediately.
