Ingredients

  • 2 cups grated taro
  • 1 cup grated coconut
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder

  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • Oil for frying

Instructions

  1. In a large bowl, mix together the grated taro, grated coconut, flour, sugar, baking powder, and salt.
  2. Add the coconut milk and vanilla extract to the dry ingredients, and mix until well combined to form a thick batter.
  3. Heat oil in a frying pan over medium heat.
  4. Scoop a spoonful of the batter and carefully place it in the hot oil, flattening it slightly with the back of the spoon.
  5. Fry the pancakes for 3-4 minutes on each side, or until golden brown and cooked through.
