Panikeke (taro And Coconut Pancakes)
Panikeke is a traditional Wallis and Futuna dish made of taro and coconut, creating delicious and fluffy pancakes that are perfect for breakfast or as a snack.
Ingredients
- 2 cups grated taro
- 1 cup grated coconut
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup coconut milk
- 1 teaspoon vanilla extract
- Oil for frying
Instructions
- In a large bowl, mix together the grated taro, grated coconut, flour, sugar, baking powder, and salt.
- Add the coconut milk and vanilla extract to the dry ingredients, and mix until well combined to form a thick batter.
- Heat oil in a frying pan over medium heat.
- Scoop a spoonful of the batter and carefully place it in the hot oil, flattening it slightly with the back of the spoon.
- Fry the pancakes for 3-4 minutes on each side, or until golden brown and cooked through.
- Remove the pancakes from the oil and place them on a paper towel to drain any excess oil.
- Serve the panikeke warm and enjoy!
