Panisse Fries With Garlic Aioli
Panisse fries are a traditional Occitan dish made from chickpea flour. They are crispy on the outside and creamy on the inside, making them a delicious and unique alternative to regular fries. Served with a flavorful garlic aioli, they make a perfect appetizer or side dish.
Ingredients
- 2 cups chickpea flour
- 4 cups water
- 2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 1/4 tsp cayenne pepper
- 1/4 cup chopped fresh parsley
Instructions
- In a saucepan, whisk together the chickpea flour, water, salt, and black pepper. Cook over medium heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan, about 10 minutes.
- Transfer the mixture to a greased 9x13 inch baking dish and smooth the top. Let it cool and set for at least 2 hours.
- While the panisse sets, prepare the garlic aioli by mixing the minced garlic, olive oil, mayonnaise, lemon juice, cayenne pepper, and chopped parsley in a bowl. Refrigerate until ready to serve.
- Once the panisse has set, cut it into fries. Heat oil in a large skillet over medium-high heat and fry the panisse fries until golden brown and crispy, about 3-4 minutes per side.
- Remove the fries from the skillet and drain on paper towels. Serve hot with the garlic aioli for dipping.
