Paniyar Mankho (assamese Style Paneer Curry)

Ingredients
- 250g paneer, cubed
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1/2 cup yogurt
- 2 green chilies, slit
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1/4 cup fresh coriander leaves, chopped
- Salt to taste
- 2 tbsp oil
- 1 cup water
Instructions
- Heat oil in a pan and sauté the chopped onions until golden brown.
- Add ginger-garlic paste and green chilies, and sauté for a few minutes.
- Now, add the tomato puree and cook until the oil separates.
- Stir in the turmeric, cumin, and coriander powders, and cook for a minute.
- Add the yogurt and cook until the mixture thickens.
- Pour in the water and bring the curry to a gentle simmer.
- Add the paneer cubes, garam masala, and salt. Simmer for 5-7 minutes.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
