Ingredients

  • 2 cups heavy cream

  • 1 vanilla bean, split and seeds scraped out
  • 2 1/4 teaspoons powdered gelatin
  • 3 tablespoons cold water

Instructions

  1. In a saucepan, combine the heavy cream, sugar, and vanilla bean and seeds. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.
  2. In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to bloom.
  3. Remove the saucepan from the heat and whisk in the bloomed gelatin until completely dissolved.
  4. Strain the mixture through a fine-mesh sieve into a pouring jug to remove the vanilla bean and any lumps.
  5. Pour the mixture into serving glasses or molds and refrigerate for at least 4 hours or until set.
  6. To serve, dip the bottoms of the glasses or molds in hot water for a few seconds, then invert onto serving plates.
