Panna Cotta Without Gelatin

Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 vanilla bean, split and seeds scraped out
  • 2 teaspoons agar agar powder
  • 1/4 cup cold water

Instructions

  1. In a saucepan, combine the heavy cream, sugar, and vanilla bean seeds. Heat over medium heat, stirring occasionally, until the mixture almost comes to a simmer.
  2. In a small bowl, whisk together the agar agar powder and cold water. Let it sit for 5 minutes to soften.
  3. Once the cream mixture is hot, remove the vanilla bean and slowly whisk in the agar agar mixture. Bring to a gentle simmer and cook for 5 minutes, stirring constantly.
  4. Remove from heat and pour the mixture into serving glasses or molds. Let them cool to room temperature, then cover and refrigerate for at least 4 hours, or until set.
  5. Serve the panna cotta chilled, topped with fresh berries or a drizzle of honey.
