Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup coconut milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the coconut milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the shredded coconut.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface. Flip and cook until golden brown on the other side.
- Repeat with the remaining batter, greasing the skillet as needed.
- Serve the quindim pancakes warm with your favorite toppings.
