Panqueques De Choclo (choclo Pancakes)
Panqueques de Choclo, or Choclo Pancakes, are a traditional dish from Ecuador made with fresh corn. These savory pancakes are perfect for breakfast or as a side dish for lunch or dinner.
Ingredients
- 2 cups fresh corn kernels
- 1/2 cup milk
- 2 eggs
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup grated cheese
- 2 tablespoons vegetable oil
Instructions
- In a blender, combine the fresh corn kernels and milk. Blend until smooth.
- Add the eggs, flour, baking powder, and salt to the blender. Blend until well combined.
- Stir in the grated cheese.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
- Pour a ladleful of the corn batter into the skillet and spread it into a round shape.
- Cook for 2-3 minutes on each side until golden brown.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
- Serve the choclo pancakes warm.
