Panqueques De Choclo (choclo Pancakes)

Ingredients

  • 2 cups fresh corn kernels
  • 1/2 cup milk
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup grated cheese
  • 2 tablespoons vegetable oil

Instructions

  1. In a blender, combine the fresh corn kernels and milk. Blend until smooth.
  2. Add the eggs, flour, baking powder, and salt to the blender. Blend until well combined.
  3. Stir in the grated cheese.
  4. Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
  5. Pour a ladleful of the corn batter into the skillet and spread it into a round shape.
  6. Cook for 2-3 minutes on each side until golden brown.
  7. Repeat with the remaining batter, adding more oil to the skillet as needed.
  8. Serve the choclo pancakes warm.
