Pap And Chakalaka Stuffed Potatoes

Ingredients

  • 4 large potatoes
  • 1 cup maize meal
  • 2 cups water
  • 1 can of chakalaka
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 green bell pepper, chopped
  • 1 carrot, grated
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 40-45 minutes, or until tender.
  3. In a large pot, bring 2 cups of water to a boil. Gradually add the maize meal while stirring constantly to avoid lumps. Reduce the heat and simmer for 15 minutes, stirring occasionally, until the pap is thick and cooked through.
  4. While the pap is cooking, heat the vegetable oil in a pan over medium heat. Add the chopped onion, diced tomatoes, green bell pepper, and grated carrot. Cook for 5-7 minutes until the vegetables are soft.
  5. Add the can of chakalaka to the vegetables and stir to combine. Simmer for an additional 5 minutes, then remove from heat.
  6. Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut a slit in the top of each potato and gently squeeze the ends to open them up.
  7. Spoon a generous amount of pap into each potato, then top with the chakalaka mixture.
  8. Serve the stuffed potatoes hot, garnished with fresh herbs if desired.
