Ingredients
- 4 large potatoes
- 1 cup maize meal
- 2 cups water
- 1 can of chakalaka
- 1 onion, chopped
- 2 tomatoes, diced
- 1 green bell pepper, chopped
- 1 carrot, grated
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 40-45 minutes, or until tender.
- In a large pot, bring 2 cups of water to a boil. Gradually add the maize meal while stirring constantly to avoid lumps. Reduce the heat and simmer for 15 minutes, stirring occasionally, until the pap is thick and cooked through.
- While the pap is cooking, heat the vegetable oil in a pan over medium heat. Add the chopped onion, diced tomatoes, green bell pepper, and grated carrot. Cook for 5-7 minutes until the vegetables are soft.
- Add the can of chakalaka to the vegetables and stir to combine. Simmer for an additional 5 minutes, then remove from heat.
- Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut a slit in the top of each potato and gently squeeze the ends to open them up.
- Spoon a generous amount of pap into each potato, then top with the chakalaka mixture.
- Serve the stuffed potatoes hot, garnished with fresh herbs if desired.
