Papad Curry (rajasthani Papad Ki Sabzi)

Ingredients

  • 4-5 papads
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 2 tablespoons oil
  • Salt to taste
  • 2 cups water

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add chopped tomatoes and cook until they turn soft.
  4. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  5. Pour water and bring the curry to a boil.
  6. Break the papads into small pieces and add them to the curry. Cook for 5-7 minutes.
  7. Garnish with coriander leaves and serve hot with roti or rice.
