Papas Arrugadas Con Mojo De Cilantro (canarian Style Potatoes With Garlic And Cilantro)
Papas Arrugadas con Mojo de Cilantro is a traditional Canarian dish featuring small, wrinkled potatoes served with a flavorful cilantro and garlic sauce. This dish is a staple of Canarian cuisine and is perfect as a side dish or tapas.
Ingredients
- 1 kg small Canarian potatoes
- Sea salt
- For the mojo de cilantro:
- 1 bunch fresh cilantro
- 4 cloves garlic
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
Instructions
- Place the potatoes in a large pot, cover with water, and add a generous amount of sea salt.
- Bring the water to a boil and cook the potatoes until they are tender, about 20-25 minutes.
- While the potatoes are cooking, prepare the mojo de cilantro. In a food processor, combine the cilantro, garlic, cumin, paprika, olive oil, and white wine vinegar. Blend until smooth and season with salt to taste.
- Once the potatoes are cooked, drain them and return them to the pot. Place the pot back on the stove over low heat and shake the potatoes to dry them out and create a wrinkled skin.
- Serve the papas arrugadas with the mojo de cilantro on the side for dipping.
