Ingredients
- 1 kg small Canarian potatoes
- Sea salt
- For the green mojo sauce:
- 1 bunch fresh cilantro
- 3 garlic cloves
- 1 small green chili pepper
- 1 tsp cumin seeds
- 1/2 cup olive oil
- 2 tbsp white wine vinegar
Instructions
- Place the potatoes in a large pot and cover them with water. Add a generous amount of sea salt to the water.
- Bring the water to a boil and cook the potatoes until they are tender, about 20 minutes.
- While the potatoes are cooking, prepare the green mojo sauce. In a food processor, combine the cilantro, garlic, green chili pepper, and cumin seeds. Pulse until finely chopped.
- With the food processor running, slowly pour in the olive oil and white wine vinegar. Continue processing until the sauce is smooth. Season with salt to taste.
- Once the potatoes are cooked, drain them and return them to the pot. Place the pot back on the stove over low heat to allow the potatoes to dry out and develop a wrinkled skin.
- Transfer the potatoes to a serving dish and serve with the green mojo sauce on the side.
