Ingredients
- 4 large potatoes, peeled and diced
- 1 tablespoon butter
- 1/2 cup milk
- Salt and pepper to taste
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 cup pitted black olives, chopped
- 2 hard-boiled eggs, chopped
- 1 cup breadcrumbs
- 2 eggs, beaten
- Vegetable oil for frying
Instructions
- Boil the potatoes in a large pot of salted water until tender. Drain and mash with butter, milk, salt, and pepper. Set aside to cool.
- Heat the vegetable oil in a skillet over medium heat. Sauté the onion and garlic until softened.
- Add the ground beef, paprika, and cumin. Cook until the beef is browned, then stir in the olives and chopped hard-boiled eggs. Remove from heat and let it cool.
- To assemble the papas rellenas, take a scoop of mashed potatoes and flatten it in the palm of your hand. Place a spoonful of the beef filling in the center and shape the potato around the filling, forming a patty.
- Dip each patty in beaten eggs, then coat with breadcrumbs.
- In a large skillet, heat vegetable oil over medium-high heat. Fry the papas rellenas until golden brown on both sides. Drain on paper towels.
- Serve the papas rellenas hot and enjoy!
