Ingredients

  • 4 large potatoes, peeled and diced
  • 1 tablespoon butter
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 cup pitted black olives, chopped
  • 2 hard-boiled eggs, chopped
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Vegetable oil for frying

Instructions

  1. Boil the potatoes in a large pot of salted water until tender. Drain and mash with butter, milk, salt, and pepper. Set aside to cool.
  2. Heat the vegetable oil in a skillet over medium heat. Sauté the onion and garlic until softened.
  3. Add the ground beef, paprika, and cumin. Cook until the beef is browned, then stir in the olives and chopped hard-boiled eggs. Remove from heat and let it cool.
  4. To assemble the papas rellenas, take a scoop of mashed potatoes and flatten it in the palm of your hand. Place a spoonful of the beef filling in the center and shape the potato around the filling, forming a patty.
  5. Dip each patty in beaten eggs, then coat with breadcrumbs.
  6. In a large skillet, heat vegetable oil over medium-high heat. Fry the papas rellenas until golden brown on both sides. Drain on paper towels.
  7. Serve the papas rellenas hot and enjoy!
