Papas Rellenas Estilo Cubano (cuban Style Stuffed Potatoes)

Ingredients

  • 4 large potatoes, peeled and cubed
  • 1/2 cup ground beef
  • 1/2 cup diced onion
  • 1/4 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a large pot, boil the potatoes until tender. Drain and mash the potatoes, then set aside to cool.
  2. In a skillet, cook the ground beef, onion, bell pepper, and garlic until the beef is browned and the vegetables are tender. Add the cumin, oregano, salt, and pepper. Remove from heat and let the mixture cool.
  3. Take a small portion of the mashed potatoes and flatten it in your hand. Place a spoonful of the beef mixture in the center and shape the potato around the filling to form a ball. Repeat with the remaining mashed potatoes and filling.
  4. Dip each potato ball into the beaten eggs, then roll in breadcrumbs until fully coated.
  5. In a deep skillet, heat vegetable oil over medium-high heat. Fry the potato balls in batches until golden brown and crispy. Drain on paper towels.
