Ingredients

  • 1 large ripe papaya, peeled, seeded, and cut into thin strips
  • 4 cups water
  • 2 cups granulated sugar
  • 1 cinnamon stick
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, combine the water, sugar, and cinnamon stick. Bring to a boil over medium heat, stirring until the sugar is dissolved.
  2. Add the papaya strips to the pot and reduce the heat to low. Simmer for 45-60 minutes, or until the papaya is translucent and the syrup has thickened.
  3. Remove the pot from the heat and stir in the vanilla extract and lemon juice. Allow the mixture to cool to room temperature.
  4. Transfer the papaya sweet to a serving dish and refrigerate for at least 2 hours before serving.
