Ingredients
- 4 large potatoes, thinly sliced
- 4 eggs
- 1 onion, thinly sliced
- 2 green chilies, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil
Instructions
- Heat oil in a large skillet over medium heat.
- Add cumin seeds and let them sizzle for a few seconds.
- Add sliced onions and green chilies, sauté until onions are golden brown.
- Add the thinly sliced potatoes, red chili powder, turmeric powder, and salt. Mix well and cook until the potatoes are tender.
- Spread the potato mixture evenly in the skillet.
- Crack the eggs on top of the potato mixture, cover the skillet, and cook until the eggs are done to your liking.
- Serve hot with toasted bread or pav.
