Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2-inch thick shell. Chop the scooped-out flesh and set aside.
  3. Heat some olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Add the ground meat to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  5. Stir in the diced tomatoes, chopped eggplant flesh, parsley, cinnamon, salt, and pepper. Simmer for 10 minutes.
  6. Fill the eggplant shells with the meat mixture and place them in a baking dish.
  7. In a small bowl, mix together the Parmesan and feta cheeses. Sprinkle the cheese mixture over the stuffed eggplants.
  8. Cover the baking dish with foil and bake for 45 minutes. Then, uncover and bake for an additional 15 minutes until the cheese is golden and bubbly.
