Ingredients
- 2 large eggplants
- 1 lb ground beef or lamb
- 1 onion, finely chopped

- 1/2 cup grated Parmesan cheese
- 1/2 cup crumbled feta cheese
- 1/2 tsp ground cinnamon
- Salt and pepper to taste

Instructions
- Preheat the oven to 375°F (190°C).
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2-inch thick shell. Chop the scooped-out flesh and set aside.
- Heat some olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the ground meat to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the diced tomatoes, chopped eggplant flesh, parsley, cinnamon, salt, and pepper. Simmer for 10 minutes.
- Fill the eggplant shells with the meat mixture and place them in a baking dish.
- In a small bowl, mix together the Parmesan and feta cheeses. Sprinkle the cheese mixture over the stuffed eggplants.
- Cover the baking dish with foil and bake for 45 minutes. Then, uncover and bake for an additional 15 minutes until the cheese is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
