Paprikash (cossack Chicken Paprikash)

Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons sweet paprika
- 1 cup chicken broth
- 1/2 cup sour cream
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper.
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic and sweet paprika, and cook for 1 minute.
- Pour in the chicken broth and return the chicken thighs to the skillet.
- Simmer, covered, for 45 minutes or until the chicken is cooked through.
- Stir in the sour cream and cook for an additional 5 minutes.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the chicken paprikash hot, garnished with fresh parsley, if desired.
