Paraguayan Beef Empanadas (empanadas De Carne)
Empanadas de Carne are a popular savory pastry in Paraguayan cuisine, filled with seasoned beef, onions, and bell peppers. These delicious hand pies are perfect for a snack, appetizer, or even a main course.
Ingredients
- 1 lb ground beef
- 1 onion, finely chopped
- 1 red bell pepper, finely chopped
- 2 hard-boiled eggs, chopped
- 1/2 cup green olives, pitted and chopped
- 1/4 cup raisins
- 2 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- 12 empanada discs (store-bought or homemade)
- Oil for frying
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Add the onion and bell pepper, and cook until softened.
- Stir in the chopped hard-boiled eggs, olives, raisins, paprika, cumin, salt, and pepper. Cook for an additional 5 minutes, then remove from heat and let the filling cool.
- Place a spoonful of the beef filling in the center of each empanada disc. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
- In a large skillet, heat oil over medium-high heat. Fry the empanadas in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove the empanadas from the oil and drain on paper towels. Serve hot and enjoy!
