Paraguayan Beef Empanadas (empanadas De Carne)

Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1/2 cup green olives, pitted and chopped
  • 1/4 cup raisins
  • 2 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 12 empanada discs (store-bought or homemade)
  • Oil for frying

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Add the onion and bell pepper, and cook until softened.
  2. Stir in the chopped hard-boiled eggs, olives, raisins, paprika, cumin, salt, and pepper. Cook for an additional 5 minutes, then remove from heat and let the filling cool.
  3. Place a spoonful of the beef filling in the center of each empanada disc. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
  4. In a large skillet, heat oil over medium-high heat. Fry the empanadas in batches until golden brown and crispy, about 3-4 minutes per side.
  5. Remove the empanadas from the oil and drain on paper towels. Serve hot and enjoy!
