Ingredients
- 6 large carrots, peeled and chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onions and garlic, and cook until softened.
- Add the chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the carrots are tender.
- Using an immersion blender, puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 5-10 minutes, then serve hot.
