Ingredients

  • 1 whole chicken, cut into pieces
  • 2 carrots, diced
  • 2 potatoes, diced

  • 1 bell pepper, diced
  • 1 cup of corn kernels
  • 1 cup of peas
  • 1 teaspoon of paprika

  • 2 tablespoons of fresh parsley, chopped

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the chicken pieces to the pot and brown them on all sides.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
  5. Add the carrots, potatoes, bell pepper, corn, peas, paprika, cumin, salt, and pepper. Simmer for an additional 20 minutes or until the vegetables are tender.
  6. Stir in the fresh parsley and adjust the seasoning if needed.
