Ingredients
- 1 whole chicken, cut into pieces
- 2 carrots, diced
- 2 potatoes, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 cup of corn kernels
- 1 cup of peas
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- Salt and pepper to taste
- 8 cups of chicken broth

Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the chicken pieces to the pot and brown them on all sides.
- Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
- Add the carrots, potatoes, bell pepper, corn, peas, paprika, cumin, salt, and pepper. Simmer for an additional 20 minutes or until the vegetables are tender.
- Stir in the fresh parsley and adjust the seasoning if needed.
- Serve the Paraguayan Chicken Soup hot and enjoy!
