Ingredients
- 1 lb fresh fish fillets
- 1 onion, chopped
- 2 tomatoes, diced

- 1/4 cup fresh parsley, chopped

Instructions

- Add the diced tomatoes, sliced bell pepper, carrot, and potato to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the fish or vegetable broth and bring the soup to a simmer.
- Gently add the fish fillets to the pot and let them cook for about 10-15 minutes, or until they are fully cooked and flake easily with a fork.
- Season the soup with salt and pepper to taste, and stir in the chopped parsley.
- Remove the pot from the heat and let the soup rest for a few minutes before serving.
