Paraguayan Sweet Corn Bread (chipa Guazu)
Chipa Guazu is a traditional Paraguayan sweet corn bread that is perfect for breakfast or as a side dish. It is a delicious combination of sweet corn, cheese, and onions, baked to golden perfection.
Ingredients
- 4 cups sweet corn kernels
- 1 cup milk
- 4 eggs
- 1 cup grated mozzarella cheese
- 1 cup grated parmesan cheese
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 1 onion, finely chopped
- 1/4 cup chopped fresh parsley
- 1 teaspoon salt
- 1 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a blender, blend the sweet corn kernels and milk until smooth.
- In a large bowl, beat the eggs and then add the blended corn mixture, grated mozzarella and parmesan cheese, flour, sugar, vegetable oil, chopped onion, parsley, salt, and baking powder. Mix until well combined.
- Pour the mixture into the greased baking dish and bake for 45 minutes or until golden brown and set in the center.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
