Parboiled Rice Chicken Curry (chilka Chicken Curry)
This Parboiled Rice Chicken Curry, also known as Chilka Chicken Curry, is a traditional dish from the Jharkhandi Cuisine. It is a flavorful and aromatic chicken curry that is best enjoyed with steamed rice or roti.
Ingredients
- 500g chicken, cut into pieces
- 1 cup parboiled rice
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 2 green chilies, slit
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 2 tbsp oil
- Fresh coriander leaves for garnish
- Salt to taste
Instructions
- Wash the parboiled rice and soak it in water for 30 minutes.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and green chilies, and sauté for a few minutes.
- Now, add the chicken pieces and cook until they are slightly browned.
- Next, add the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 10 minutes.
- Meanwhile, drain the soaked rice and add it to the chicken curry. Add 2 cups of water and bring it to a boil.
- Cover and cook on low heat until the rice and chicken are fully cooked, about 20-25 minutes.
- Sprinkle garam masala and garnish with fresh coriander leaves.
- Serve hot with steamed rice or roti.
