Ingredients
- 2 cups parboiled rice
- 4 medium potatoes, diced
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Water as needed
Instructions
- Wash the parboiled rice and soak it in water for 2 hours. Drain the water and grind the rice to make a smooth batter. Add salt and water to make a thin batter.
- Heat a non-stick pan and pour a ladleful of batter. Spread it in a circular motion to make a thin flatbread. Cook until both sides are golden brown. Repeat with the remaining batter to make more flatbreads.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions are golden brown.
- Add the diced potatoes, turmeric powder, red chili powder, and salt. Cook until the potatoes are tender.
- Add the chopped tomatoes and garam masala. Cook for a few minutes until the tomatoes are soft and the spices are well combined.
- Serve the parboiled rice flatbread with the spicy potato curry and enjoy!
