Ingredients

  • 2 cups parboiled rice
  • 4 medium potatoes, diced
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Water as needed

Instructions

  1. Wash the parboiled rice and soak it in water for 2 hours. Drain the water and grind the rice to make a smooth batter. Add salt and water to make a thin batter.
  2. Heat a non-stick pan and pour a ladleful of batter. Spread it in a circular motion to make a thin flatbread. Cook until both sides are golden brown. Repeat with the remaining batter to make more flatbreads.
  3. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions are golden brown.
  4. Add the diced potatoes, turmeric powder, red chili powder, and salt. Cook until the potatoes are tender.
  5. Add the chopped tomatoes and garam masala. Cook for a few minutes until the tomatoes are soft and the spices are well combined.
  6. Serve the parboiled rice flatbread with the spicy potato curry and enjoy!
