Ingredients

  • 4 red snapper fillets
  • 4 large potatoes, thinly sliced
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup olive oil
  • 1/4 cup white wine
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Season the red snapper fillets with salt, pepper, and paprika.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced potatoes and cook until golden brown. Remove and set aside.
  4. In the same skillet, sauté the chopped onion and garlic until softened.
  5. Place the red snapper fillets on top of the onion and garlic mixture.
  6. Pour the white wine over the fish and cover the skillet. Cook for 10-12 minutes or until the fish is cooked through.
  7. Serve the red snapper fillets on a bed of the sautéed potatoes and drizzle with the cooking juices.
