Ingredients
- 4 red snapper fillets
- 4 large potatoes, thinly sliced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup olive oil
- 1/4 cup white wine
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Season the red snapper fillets with salt, pepper, and paprika.
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced potatoes and cook until golden brown. Remove and set aside.
- In the same skillet, sauté the chopped onion and garlic until softened.
- Place the red snapper fillets on top of the onion and garlic mixture.
- Pour the white wine over the fish and cover the skillet. Cook for 10-12 minutes or until the fish is cooked through.
- Serve the red snapper fillets on a bed of the sautéed potatoes and drizzle with the cooking juices.
