Parippu Curry (sri Lankan Lentil Curry)
Parippu curry, also known as Sri Lankan lentil curry, is a popular dish in Sri Lankan cuisine. It is a flavorful and comforting dish made with red lentils, coconut milk, and a blend of aromatic spices.
Ingredients
- 1 cup red lentils
- 2 cups water
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, sliced
- 1/2 teaspoon turmeric
- 1 teaspoon curry powder
- 1/2 cup coconut milk
- Salt to taste
- 1 tablespoon coconut oil
- 1 sprig curry leaves
Instructions
- Rinse the red lentils under running water until the water runs clear.
- In a pot, combine the rinsed lentils and water. Bring to a boil, then reduce heat and simmer for 15 minutes or until the lentils are soft.
- In a separate pan, heat coconut oil and sauté the onions, garlic, ginger, and green chili until the onions are soft and translucent.
- Add turmeric, curry powder, and curry leaves to the onion mixture and cook for another 2 minutes.
- Add the cooked lentils to the onion mixture and stir to combine. Pour in the coconut milk and simmer for 5 minutes.
- Season with salt to taste and serve hot with rice or roti.
