Parippu Curry (sri Lankan Lentil Curry)

Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, sliced
  • 1/2 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1/2 cup coconut milk
  • Salt to taste
  • 1 tablespoon coconut oil
  • 1 sprig curry leaves

Instructions

  1. Rinse the red lentils under running water until the water runs clear.
  2. In a pot, combine the rinsed lentils and water. Bring to a boil, then reduce heat and simmer for 15 minutes or until the lentils are soft.
  3. In a separate pan, heat coconut oil and sauté the onions, garlic, ginger, and green chili until the onions are soft and translucent.
  4. Add turmeric, curry powder, and curry leaves to the onion mixture and cook for another 2 minutes.
  5. Add the cooked lentils to the onion mixture and stir to combine. Pour in the coconut milk and simmer for 5 minutes.
  6. Season with salt to taste and serve hot with rice or roti.
