Parippu Soup (sri Lankan Lentil Soup)

Ingredients

  • 1 cup red lentils
  • 4 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 green chili, sliced
  • 1/2 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1 can (13.5 oz) coconut milk
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons coconut oil
  • 1 sprig curry leaves

Instructions

  1. Rinse the red lentils under running water until the water runs clear.
  2. In a large pot, combine the rinsed lentils and water. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
  3. Add the onion, garlic, ginger, green chili, turmeric, and curry powder to the pot. Cook for another 10 minutes or until the lentils are soft.
  4. Pour in the coconut milk and season with salt and pepper. Simmer for an additional 5 minutes.
  5. In a separate small pan, heat the coconut oil and fry the curry leaves until they are crispy. Pour this mixture over the soup before serving.
