Parippu Soup (sri Lankan Lentil Soup)
Parippu Soup, also known as Sri Lankan Lentil Soup, is a traditional dish that is both comforting and nutritious. This flavorful soup is made with red lentils, coconut milk, and a blend of aromatic spices, making it a perfect choice for a cozy meal.
Ingredients
- 1 cup red lentils
- 4 cups water
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 green chili, sliced
- 1/2 teaspoon turmeric
- 1 teaspoon curry powder
- 1 can (13.5 oz) coconut milk
- Salt to taste
- Pepper to taste
- 2 tablespoons coconut oil
- 1 sprig curry leaves
Instructions
- Rinse the red lentils under running water until the water runs clear.
- In a large pot, combine the rinsed lentils and water. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
- Add the onion, garlic, ginger, green chili, turmeric, and curry powder to the pot. Cook for another 10 minutes or until the lentils are soft.
- Pour in the coconut milk and season with salt and pepper. Simmer for an additional 5 minutes.
- In a separate small pan, heat the coconut oil and fry the curry leaves until they are crispy. Pour this mixture over the soup before serving.
