Ingredients

Instructions

  1. Place the eggplant slices in a colander and sprinkle with salt. Let them sit for 30 minutes to draw out the bitterness. Rinse and pat dry with paper towels.
  2. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
  3. Dredge each eggplant slice in the flour, dip in the egg, and coat with breadcrumbs.
  4. In a large skillet, heat vegetable oil over medium heat. Fry the breaded eggplant slices in batches until golden brown on both sides. Transfer to a paper towel-lined plate to drain excess oil.
