Ingredients

Instructions
- Place the eggplant slices in a colander and sprinkle with salt. Let them sit for 30 minutes to draw out the bitterness. Rinse and pat dry with paper towels.
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
- Dredge each eggplant slice in the flour, dip in the egg, and coat with breadcrumbs.
- In a large skillet, heat vegetable oil over medium heat. Fry the breaded eggplant slices in batches until golden brown on both sides. Transfer to a paper towel-lined plate to drain excess oil.
- Preheat the oven to 375°F (190°C). Spread a thin layer of tomato sauce in the bottom of a baking dish. Arrange a layer of fried eggplant slices on top of the sauce. Sprinkle with Parmesan and mozzarella cheese. Repeat the layers, finishing with a layer of cheese on top.
