Ingredients

  • 2 large eggplants, sliced into 1/2-inch rounds
  • Salt

  • 4 eggs, beaten

  • 4 cups marinara sauce
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Place the eggplant slices in a colander and sprinkle with salt. Let them sit for 30 minutes to release excess moisture. Rinse and pat dry with paper towels.
  2. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
  3. Dredge each eggplant slice in the flour, then dip into the beaten eggs, and coat with breadcrumbs.
  4. In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded eggplant slices in batches until golden brown on both sides. Drain on paper towels.
  5. Preheat the oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish.
  6. Arrange a layer of fried eggplant slices on top of the sauce. Sprinkle with Parmesan and mozzarella cheese. Repeat the layers, finishing with a final layer of marinara sauce and cheese on top.
