Ingredients

  • 4 medium zucchinis, sliced lengthwise
  • 2 cups tomato sauce

  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Dredge the zucchini slices in flour, then dip in the beaten eggs, and fry in olive oil until golden brown. Drain on paper towels.
  2. Preheat the oven to 375°F (190°C).
  3. In a baking dish, spread a layer of tomato sauce, then arrange a layer of fried zucchini slices on top. Sprinkle with Parmesan and mozzarella cheese. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
  4. Bake in the preheated oven for 30 minutes, or until the cheese is golden and bubbly.
  5. Let it cool for a few minutes before serving.
