Ingredients
- 4 medium zucchinis, sliced lengthwise
- 2 cups tomato sauce
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Dredge the zucchini slices in flour, then dip in the beaten eggs, and fry in olive oil until golden brown. Drain on paper towels.
- Preheat the oven to 375°F (190°C).
- In a baking dish, spread a layer of tomato sauce, then arrange a layer of fried zucchini slices on top. Sprinkle with Parmesan and mozzarella cheese. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
- Bake in the preheated oven for 30 minutes, or until the cheese is golden and bubbly.
- Let it cool for a few minutes before serving.
