Ingredients

  • 2 bitter melons, halved and deseeded
  • 200g minced chicken
  • 150g firm tofu, diced

  • 1 shallot, minced
  • 1 red chili, minced
  • 1 teaspoon shrimp paste
  • 1 teaspoon tamarind paste
  • 1 teaspoon palm sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 2 tablespoons cooking oil
  • 2 cups water

Instructions

  1. In a bowl, mix the minced chicken, diced tofu, garlic, shallot, red chili, shrimp paste, tamarind paste, palm sugar, salt, and white pepper.
  2. Stuff the bitter melon halves with the minced chicken mixture.
  3. Heat the cooking oil in a pan over medium heat.
  4. Add the stuffed bitter melon and cook until the chicken is browned.
  5. Pour in the water and let it simmer for 20 minutes.
  6. Remove the stuffed bitter melon from the pan and slice into pieces.
  7. Serve hot with steamed rice.
