Ingredients

  • 4 bitter melons
  • 200g shrimp, peeled and deveined
  • 200g firm tofu, diced

  • 1 shallot, minced
  • 1 red chili, sliced
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp pepper
  • 2 tbsp oil for frying

Instructions

  1. Slice the bitter melons lengthwise and remove the seeds and pith.
  2. Blanch the bitter melon slices in boiling water for 2 minutes, then drain and set aside.
  3. In a bowl, mix the shrimp, tofu, garlic, shallot, red chili, salt, sugar, and pepper.
  4. Stuff the bitter melon slices with the shrimp and tofu mixture.
  5. Heat the oil in a pan over medium heat and fry the stuffed bitter melon until golden brown and the filling is cooked through.
  6. Remove from the pan and drain on paper towels.
