Parwal Curry (potala Rasa)
Parwal Curry, also known as Potala Rasa, is a popular dish from Odia Cuisine. This flavorful curry is made with parwal (pointed gourd) and a blend of aromatic spices, making it a delightful addition to any meal.
Ingredients
- 500g parwal (pointed gourd), peeled and sliced
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 2 tbsp oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add the chopped onions. Sauté until golden brown.
- Add ginger-garlic paste and cook for 2 minutes.
- Now, add the tomato puree and cook until the oil separates.
- Add turmeric, cumin powder, coriander powder, red chili powder, and salt. Mix well.
- Add the sliced parwal and cook for 5 minutes.
- Pour in 2 cups of water, cover the pan, and let it simmer for 10 minutes or until the parwal is tender.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
