Ingredients

  • 500g parwal (pointed gourd), peeled and sliced
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add the chopped onions. Sauté until golden brown.
  2. Add ginger-garlic paste and cook for 2 minutes.
  3. Now, add the tomato puree and cook until the oil separates.
  4. Add turmeric, cumin powder, coriander powder, red chili powder, and salt. Mix well.
  5. Add the sliced parwal and cook for 5 minutes.
  6. Pour in 2 cups of water, cover the pan, and let it simmer for 10 minutes or until the parwal is tender.
  7. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
