Ingredients
- 1 lb mixed seafood (such as shrimp, mussels, and squid)
- 2 cups short-grain rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup frozen peas
- 4 cups fish or seafood broth
- 1 tsp paprika
- 1/2 tsp saffron threads
- Salt and pepper to taste
- 2 tbsp olive oil
- Lemon wedges for serving
Instructions
- Heat the olive oil in a large paella pan or skillet over medium heat.
- Add the chopped onion, garlic, and red bell pepper. Cook until softened.
- Stir in the rice, paprika, and saffron threads. Cook for 2 minutes.
- Pour in the fish or seafood broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
- Add the mixed seafood and frozen peas. Cook for an additional 10-15 minutes, or until the seafood is cooked through and the rice is tender.
- Season with salt and pepper to taste.
- Remove from heat and let the paella rest for 5 minutes before serving.
- Serve with lemon wedges on the side.
