Pascuense Prawn Curry

Ingredients

  • 1 lb fresh prawns, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red chili, finely chopped
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the chopped onion, garlic, and red chili. Sauté until the onion is soft and translucent.
  3. Add the ground turmeric, cumin, coriander, and paprika. Stir well to combine with the onion mixture.
  4. Pour in the coconut milk and bring the mixture to a gentle simmer.
  5. Add the prawns to the pan and cook for 5-7 minutes, or until they are pink and cooked through.
  6. Season with salt to taste.
