Pascuense Pupusas

Ingredients

  • 2 cups masa harina (corn flour)
  • 1 1/2 cups warm water
  • 1 cup refried beans
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced cooked ham
  • 1/2 cup diced pineapple
  • 1/4 cup chopped cilantro
  • Salt to taste

Instructions

  1. In a large bowl, mix the masa harina and warm water to form a smooth dough. Divide the dough into 6 equal portions and roll each into a ball.
  2. Flatten each ball into a disc and place a spoonful of refried beans, cheese, ham, pineapple, and cilantro in the center. Fold the dough over the filling and seal the edges to form a stuffed disc.
  3. Heat a non-stick skillet over medium heat and cook the pupusas for 4-5 minutes on each side, or until golden brown and crispy.
  4. Serve the pupusas hot with a side of curtido (pickled cabbage) and tomato salsa.
