Pashtun Chicken Curry

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 1/2 cup plain yogurt
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle.
  2. Add chopped onions and cook until golden brown.
  3. Add minced garlic and grated ginger, and sauté for 2 minutes.
  4. Add chicken pieces and cook until they are no longer pink.
  5. Stir in the pureed tomatoes, yogurt, and all the spices. Mix well.
  6. Cover and simmer for 30 minutes, or until the chicken is tender and the sauce has thickened.
  7. Garnish with fresh cilantro before serving.
