Pashtun Chicken Karahi

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 tomatoes, chopped
  • 1 onion, sliced
  • 3-4 green chilies, sliced
  • 1/4 cup oil
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a karahi or deep skillet over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Stir in the onions and cook until they turn golden brown.
  4. Add ginger paste, garlic paste, and green chilies. Cook for 2-3 minutes.
  5. Add the chicken pieces and cook until they are no longer pink.
  6. Stir in the chopped tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Cover and cook for 15-20 minutes, or until the chicken is tender.
  7. Garnish with fresh coriander leaves and serve hot with naan or rice.
