Pashtun Chicken Kebabs

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 cup plain yogurt
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 onion, cut into chunks
  • 1 bell pepper, cut into chunks

Instructions

  1. In a bowl, mix together the yogurt, olive oil, garlic, coriander, cumin, turmeric, cayenne pepper, salt, and pepper.
  2. Add the chicken cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat a stovetop grill pan over medium-high heat. Thread the marinated chicken, onion, and bell pepper onto skewers.
  4. Grill the kebabs for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
