Pashtun Chicken Kebabs

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1 cup plain yogurt
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 1 onion, cut into chunks
- 1 bell pepper, cut into chunks
Instructions
- In a bowl, mix together the yogurt, olive oil, garlic, coriander, cumin, turmeric, cayenne pepper, salt, and pepper.
- Add the chicken cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat a stovetop grill pan over medium-high heat. Thread the marinated chicken, onion, and bell pepper onto skewers.
- Grill the kebabs for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
