Pashtun Lamb Korma

Ingredients

  • 1 kg lamb, cut into pieces
  • 2 onions, finely chopped
  • 1 cup plain yogurt
  • 1/2 cup ghee or oil
  • 2 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • Salt to taste
  • 2 cups water
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat ghee or oil in a large pot over medium heat. Add cumin seeds and let them sizzle.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for 2 minutes.
  4. Add lamb pieces and brown them on all sides.
  5. Stir in coriander powder, turmeric powder, red chili powder, ground cardamom, ground cinnamon, ground cloves, and salt. Cook for 5 minutes.
  6. Whisk yogurt and pour it into the pot. Cook for another 5 minutes.
  7. Pour water into the pot, cover, and simmer for 1 hour or until the lamb is tender.
  8. Garnish with chopped cilantro before serving.
