Pashtun Lamb Korma
Pashtun Lamb Korma is a traditional dish from Pashtun Cuisine, known for its rich and aromatic flavors. This creamy and tender lamb korma is a perfect main course for special occasions or gatherings.
Ingredients
- 1 kg lamb, cut into pieces
- 2 onions, finely chopped
- 1 cup plain yogurt
- 1/2 cup ghee or oil
- 2 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/4 tsp ground cardamom
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- Salt to taste
- 2 cups water
- Chopped fresh cilantro for garnish
Instructions
- Heat ghee or oil in a large pot over medium heat. Add cumin seeds and let them sizzle.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for 2 minutes.
- Add lamb pieces and brown them on all sides.
- Stir in coriander powder, turmeric powder, red chili powder, ground cardamom, ground cinnamon, ground cloves, and salt. Cook for 5 minutes.
- Whisk yogurt and pour it into the pot. Cook for another 5 minutes.
- Pour water into the pot, cover, and simmer for 1 hour or until the lamb is tender.
- Garnish with chopped cilantro before serving.
